ingredients

1 cup milk
3 tablespoons flour
1 cup white sugar
1 cup butter

directions

Cook milk and flour until thick, stirring constantly. Remove from heat and cool to below room temperature, stirring occasionally.

Cream sugar and butter until real fluffy. Add flour mixture, very slowly, 1 tablespoon at a time. Beat well after each addition.

Suggested icing for Waldorf Astoria Cake.

    This is the frosting recipe that my family used for the red velvet cake from the Waldorf Astoria. I learned that if it breaks (separates), all you need to do is keep beating with the mixer. I learned this from the bakery department manager at Whole Foods, San Mateo, CA.

    I searched for this recipe many years and came across it on a bag of Robin Hood flour back in the early 80's. It took so long to find it because I didn't know what it was called. Anyone who hasn't tried this frosting recipe, you do not know what you are missing. It's almost like the white cream filling in snack cakes. I call it fabulous.

    I made this and it tasted AWESOME! This is my 4th or 5th time making it. And I've mastered it. I think what helps when making it is using 2% milk rather than whole milk. Its turns out much smoother. My family loves this icing and so do I. Its so easy to make.
