Boiled icing is a type of icing that is made by boiling sugar and water together until they form a thick syrup. Then, egg white is beaten into the mixture until it forms a stiff, glossy frosting. Boiled icing is often used to decorate cakes and cupcakes because it sets quickly and holds its shape well.

2 tablespoons water
1 cup white sugar
1 egg white
vanilla extract, to taste
food coloring, as desired

directions

Put water and sugar in a saucepan, and boil gently for 5 minutes without stirring. Beat egg white to a stiff froth in a basin. Pour on the boiling syrup gradually, and beat until thick. Add vanilla and, if you like, a little coloring. Pour over cake.
