ingredients
1 large can pineapple, cut, reserving juice
1 large can Queen Anne cherries, slivered (may be bought seeded)
1 pound marshmallows, cut
1 pound almonds, blanched
1 pint whipping cream, whipped
FRUIT DRESSING
5 tablespoons lemon juice
2 tablespoons sugar
3 egg yolks
1 tablespoon cornstarch, heaping
1 1/2 teaspoon salt
1 can pineapple, juice of
directions
Drain fruits well, add marshmallows, almonds, dressing (see below), and lastly, fold in whipped cream.
For Dressing: Cook in double boiler until very thick.
Make this salad the day before it is to be used and place in refrigerator or freezer. Stir once or twice.
