2 tablespoons Kahlua liqueur
2 1/2 cups all-purpose flour
3/4 cup unsweetened cocoa
1 tablespoon baking powder
1/2 teaspoon salt
1/2 cup butter, softened
1 1/3 cup sugar
3 large eggs
1/2 cup chopped pecans
directions
Preheat oven to 350 degrees F. Grease and flour a large cookie sheet.
In a medium bowl, combine the flour, cocoa, baking powder and salt until thoroughly mixed.
In a large bowl, beat butter and sugar with an electric stand mixer until light and fluffy. Add eggs, one at a time, until blended. Add Kahlua and beat until blended. Add flour mixture until just blended. Remove bowl from mixer and knead in nuts by hand.
Divide the dough in half (flour your hands if the dough is too sticky). Shape into two 12" by 3" loaves and place on the cookie sheet. Bake for 30 minutes.
Remove from oven and let cool for 10-12 minutes. Cut each loaf into half-inch thick slices. Place slices cut-side down on the cookie sheet.
Place in the oven and bake for 18-20 more minutes or until done. Remove biscotti to a cooling rack and let cool completely.
