ingredients
1 cup sugar
1 cup vegetable oil
1/2 cup confectioners' sugar
3/4 cup soft butter or margarine
2 eggs, beaten
2 teaspoons vanilla extract
1 cup crushed peppermint candy canes
4 cups all-purpose flour
1/2 teaspoon salt
1 teaspoon soda
1 cup crushed pecans
directions
Preheat oven to 375 degrees F.
Cream sugars, oil and butter in large bowl. Add eggs and vanilla. Stir in crushed candy and mix well. Stir flour, salt, soda and pecans together, and then stir into creamed mixture.
Drop by teaspoonfuls on an ungreased cookie sheet. Bake for 7-10 minutes or until the cookies start to brown around the edges. Cool on wire rack.

These cookies are awesome! My mother requests these for the holidays! Make sure you use parchment paper or they will stick to the pan and burn the sugar in the peppermints. I also crush the peppermints in the blender, so that you don't bite into the cookie and get a huge chunk of mint as the hammer and plastic bag trick never seems to work for me.
