ingredients
1 cup shortening
2 cups brown sugar (packed)
2 eggs
1/2 cup cold coffee
3 1/2 cups flour
1 teaspoon baking soda
1 teaspoon salt
1 teaspoon nutmeg
1 teaspoon cinnamon
2 cups raisins
1 1/4 cup chopped nuts of your choice (optional)
directions
Mix shortening, sugar and eggs thoroughly. Stir in coffee. In separate bowl, mix dry ingredients. Blend dry ingredients into shortening mixture. Mix in raisins and nuts. Chill dough at least 1 hour.
Heat oven to 400 degrees F. Lightly grease cookie sheet. Drop rounded teaspoonfuls of cookie dough onto cookie sheet approximately 2" apart. Bake 8-10 minutes or until no imprint remains when touched lightly in center.
If you want them shaped like store-bought hermits, place the dough on cookie sheet in long strips, approximately 1" x 3/4". Only put 2 strips on cookie sheet at a time as they spread out when cooking. After they come out of the oven, slice into size of bars desired.
