Crystallized Ginger Bar Cookies

2 1/4 cups flour
1/2 cup packed light brown sugar
1 tablespoon ground ginger
1/2 teaspoon baking powder
1 pinch salt
1 cup unsalted butter, cut into pieces and slightly softened
1/2 cup finely chopped crystallized ginger
directions
Preheat oven to 350 degrees F. Grease a 13x9x2-inch baking pan.
Combine the flour, brown sugar, ground ginger, baking powder, and salt in a large mixing bowl.
Add the butter and cut in with a pastry blender or two forks until the mixture resembles fine crumbs.
Stir in the crystallized ginger with a fork until just mixed.
Press the dough into an even layer in the greased baking pan. Place in the oven and bake at 350 degrees F for 20 minutes or until edges are lightly browned.
Place the pan on a wire rack to cool. When cool, cut into bars. Can be frozen or stored at room temperature for up to one week in an airtight container.
