Not to be confused with evaporated milk, sweetened condensed milk is very sweet (and very sticky) and used primarily in desserts.

Butter, sugar, flour...if you think you can't bake desserts, this shortbread is here to prove you wrong. It's a great base recipe to turn into all sorts of shortbread flavors or creations. You'll be hooked once you try it.
1 cup butter, softened
1/2 cup sugar
2 1/2 cups sifted flour
Place the butter and sugar in a mixing bowl. With a mixer on medium speed, cream the ingredients together until light and fluffy.
With the mixer running on low, add the flour 1/2 cup at a time. Mix until well combined.
Place the dough in the refrigerator and chill for 1-2 hours.
Preheat oven to 300 degrees F.
Remove the dough from the refrigerator and divide into two equal balls. Pat each dough ball into a circle approximately 7-inches in diameter.
Place the circles on a baking sheet and lightly score them with a knife to mark wedges (6-16 depending on how big you want the pieces).
Place the baking sheet in the oven and bake at 300 degrees F for 30 minutes or until lightly browned. Do not let get too brown.
Remove from oven and let cool for 1-2 minutes then place on a cooling rack.

I tweaked this to make lemon shortbread to use extra lemon juice from making lemon curd. Added heaping tablespoon of grated lemon peel, appx 1/3 cup lemon juice, and enough additional confectioners sugar to balance the tartness and consistency of the dough. Mixed only until the dough gathered on the mixer paddle then formed it into a disc and chilled for 30 minutes. Rolled it out, cut with a cookie cutter, baked on parchment paper. Cookies were fragrant, buttery and tender. Topped with dabs of homemade lemon curd, got rave reviews. Keeper recipe!

This is a perfect recipe. I've done both cutting into wedges and cutting them into squares. I like the idea of dipping them in chocolate, I haven't done that version yet!

My daughter & I were searching for a quick easy cookie that we could make using ingredients we already had on hand. This is it!! Just pulled them out of the oven 5 minutes ago, and , of course we had to taste while hot...delicious! I would definitely recommend this cookie recipe to anyone. I am also not a baker....I have to use very easy recipes, most of my deserts come out, well not so yummy. But I got rave reviews! A+ and I will be making these cookies again.

I make this simple and quick shortbread recipe all the time - to rave reviews! Sometimes I sprinkle some cinnamon sugar on top of it, or I reduce the flour to 2 1/3 cups and mix in a packet of instant oatmeal - I've used various flavors. It makes a great and buttery oatmeal cookie.

this is a great basic recipe! i ended up not forming into circles but instead I formed them into small squares and baked (then dipped into chocolate). (to dip into chocolate, microwave good quality chocolate chips and some shortening, then mix and dip cookies! leave cookies on wax paper to set) i would definitely recommend using this recipe! quick, easy, and tasty!
