ingredients
1 very ripe plantain
2 cups flour
1/2 cup brown sugar
1/2 cup granulated sugar
2 eggs, separated
1/2 teaspoon cinnamon
1 cup milk
1/2 cup raisins
2 1/2 teaspoons baking powder
2 teaspoons vegetable oil
directions
Preheat oven to 400 degrees F.
Boil then mash plantains, let cool.
Sift flour, baking powder, cinnamon and granulated sugar together. Add brown sugar. Set aside.
Beat egg whites until stiff. Mix in egg yolks, oil and milk. Add to dry ingredients. Lightly mix in mashed plantains and raisins. Do not over-mix.
Line muffin pan with muffin paper and grease well. Fill muffin pan with batter. Bake for 20-25 minutes.
