2 cups granulated sugar
2 cups brown sugar
2 cups shortening
4 eggs
1 teaspoon baking powder
2 teaspoons baking soda
1 teaspoon ground cinnamon
3 cups all-purpose flour
1 teaspoon salt
2 teaspoons vanilla extract
6 cups oatmeal (not instant)
Preheat the oven to 350 degrees F. Grease baking sheets.
Cream together the granulated sugar, brown sugar, and shortening in a large bowl, using a pastry blender or mixer. Mix in the eggs until the dough is uniform in color.
Sift together the baking powder, baking soda, cinnamon, flour, and salt. Stir in the oatmeal. Stir the dry mixture into the egg mixture in small amounts until it is all incorporated. Stir in the vanilla.
Form the dough into 1-inch balls. Roll each cookie ball in granulated sugar and place on the greased baking sheets. Place the baking sheet in the oven and bake at 350 degrees F for 8-10 minutes.
Remove the baking sheets from the oven and let the cookies cool for one minute, then transfer them to a wire rack to cool completely.
Store the oatmeal sugar cookies in an airtight container.
