ingredients
2 cups sugar
4 eggs
2 pounds pecans
2 teaspoons vanilla extract
2 cups flour
1 teaspoon baking powder
1 pound candied pineapple
1 pound candied cherries
1 pound dates
directions
Beat eggs, sugar and vanilla until frothy. Coat fruits with flour mixture (flour and baking powder). Add egg mixture.
Line 2 loaf pans with wax paper and dump half the mixture in each pan. Bake in a preheated 300 degrees F oven for 1 hour.
