1 pound raisins
2 cups water, PLUS"PLUS" means this ingredient in addition to the one on the next line, often with divided uses
2 teaspoons water, divided
1 cup white sugar
1 cup brown sugar
1 cup shortening
1 teaspoon salt
2 teaspoons cinnamon
1/8 teaspoon nutmeg
1 teaspoon cloves
2 teaspoons baking soda
4 1/2 cups cake flour
1 cup nuts, optional
Caramel Frosting
3/4 cup brown sugar
1/2 cup water
1/2 teaspoon salt
3 tablespoons butter
2 1/4 cups sifted confectioners' sugar
1 teaspoon vanilla extract
directions
Combine raisins, 1 cup water, sugars, shortening, salt and spices in a saucepan. Bring to a boil, simmer 3 minutes, stirring occasionally. Cool until lukewarm, then add remaining cup water.
Dissolve soda in 2 teaspoons of water and set aside.
Stir sifted and measured flour into raisin mixture and beat until smooth. Add nuts, if desired, then dissolved soda last.
Pour into greased and floured 13" x 9" pan and bake 50-55 minutes at 350 degrees F. It may also be cooked in a tube pan.
For Caramel Frosting: Combine brown sugar, water, and salt in a saucepan. Cook 6 minutes, stirring often.
Cool to lukewarm and stir in butter. Gradually stir in sifted confectioner's sugar, beating until smooth. Stir in vanilla and spread on cake.
