ingredients
3 cups Brazil nuts
1 cup sultanas
1 cup almonds
1 cup sticky raisins
1 cup cashew nuts
1 1/2 cup flour
1 cup red cherries
1 cup brown sugar
1 cup green cherries
1 teaspoon baking powder
3 cups glace fruit (pineapple, mango, etc.)
1/2 teaspoon salt
4 small eggs
1 teaspoon vanilla extract
directions
Measure the nuts, fruit and dry ingredients into a large bowl, reserving some nuts for decoration. Cut up large pieces of fruit. Mix eggs and vanilla until thoroughly combined and add to other ingredients.
Line a metal ring pan with baking paper and spray with a non-stick spray. Press mixture firmly into pan and decorate with nuts.
Microwave loaf at power level 3 (30% power) for 1 hour until firm and cooked evenly, or bake ring cake at 280 degrees F for 2 1/2 to 3 hours until cake feels firm. If top browns too quickly, cover loosely with baking paper. Use half mixture for loaf cake.
