ingredients

1 medium onion, chopped
3 cloves garlic, finely chopped
2 pounds pork boneless top loin, cut into 1 1/2 inch pieces
1/4 cup cornmeal
1 teaspoon cumin
1/2 teaspoon dried oregano leaves
1/4 teaspoon salt
1 can (15 ounce size) chili beans in sauce, undrained
1 can (14.5 ounce size) diced tomatoes with mild chilies, undrained
1 cup chicken broth
2 cups frozen whole kernel corn, thawed

directions

Place onion and garlic in 3 1/2 to 6 quart slow cooker. Top with pork. Mix cornmeal, cumin, oregano and salt; sprinkle over pork and mix well. Add beans, tomatoes and broth; mix well.

Cover and cool on LOW HEAT setting 8-10 hours or until pork is tender. Stir in corn. Cover and cook on LOW HEAT setting about 30 minutes or until corn is tender.

    This is quick and easy and a hit with all my friends at a chilli cookout. It was a greatto have a litte variety at the party. I made mine a little spicey with some curry and chilli powder. Yum!
