ingredients
8 chicken thighs, skinned, boned, diced
1 can (4 ounce size) minced olives
3 cloves garlic
3 tablespoons olive oil
3 teaspoons grated ginger
1 teaspoon turmeric
1 1/2 cup chicken broth
1 teaspoon paprika
1 teaspoon cumin
salt
black pepper
1 lemon, juiced
directions
Saute garlic in olive oil in large, deep skillet. Add ginger, turmeric, chicken and broth (don't splash on yourself; the turmeric stains like crazy). Cover and cook slowly over medium heat 15-20 minutes, stirring once or twice.
Remove chicken from liquid. Simmer the sauce until it becomes thick, reducing by half. Add paprika, cumin, lemon juice, salt and pepper. Stir and simmer 5 minutes. Add olives. Stir and simmer another 5 minutes.
Dump chicken into sauce and serve.
