Beer makes batters better, meat more tender, and sauces more flavorful.


1 cup plain yogurt
1 teaspoon salt
1 clove garlic, minced
1/2 teaspoon ground cardamom (preferably fresh-ground)
1 teaspoon chili powder
1/4 teaspoon cinnamon
3 pounds chicken parts
2 tablespoons flour
Combine yogurt and seasonings. Marinate chicken in yogurt mixture for at least 4 hours (overnight is best).
Remove chicken from marinade (you'll need to scrape most of it off with a spoon) and place in a baking pan, skin-side up. Stir flour into marinade and spoon over chicken.
Bake at 350 degrees F, basting occasionally with marinade, for about 1-1/2 hours or until tender.
