ingredients
1 pound smoked sausage, cut into 1/2" pieces
8 chicken leg and thigh quarters
3 cups long grain white rice
2 cups yellow rice
5 celery stalks, chopped
1 medium onion, chopped
4 carrot sticks, chopped
1 green bell pepper, chopped
directions
Place chicken pieces, chopped celery, chopped onion, chopped carrots, chopped green pepper, and smoked sausage into boiling water. Boil chicken until it falls off of bone or is easily removed.
De-bone chicken, leaving meat in the water in the pot. Lower heat to low and add rice. Cook covered until rice is done and water is no longer standing on bottom of the pot.
You will have to experiment with adding water during the cooking process and how much rice to actually use.
