ingredients
2 teaspoons olive oil
3/4 cup thinly sliced green onions
2 teaspoons minced garlic
1/2 pound fresh mushrooms, sliced
3 ounces canned tomato paste, no salt added
1 can (8 ounce size) tomato sauce, no salt added
1/2 cup dry white wine
1 tablespoon chicken bouillon granules
1 teaspoon sugar
1 1/2 teaspoon dried basil
1 tablespoon dried oregano
1/3 cup ripe olives
1/4 teaspoon white pepper
1/4 teaspoon paprika
1/2 teaspoon black pepper
3 pounds skinless chicken, cut up
1/4 cup grated Parmesan cheese
6 ounces marinated artichoke hearts, lightly rinsed and well drained
directions
In a 10-inch ceramic or glass dish place oil, onion, garlic and mushrooms. Cover and microwave on high 4 to 6 minutes. May be drained.
Stir in tomato paste, tomato sauce, wine, bouillon, sugar and seasonings. Add chicken pieces. Spoon sauce over top making sure all pieces are covered with sauce. Microwave on high 10 minutes. Rotate dish 1/2 turn and microwave on medium high (70% power) for 16 minutes.
Rearrange chicken and sprinkle with cheese. Cover and microwave at medium high 16 to 19 minutes. Arrange artichoke hearts around chicken pieces. Cover. Microwave on high for 5 minutes. Let stand covered 5 minutes.
