1 egg
1 pound gizzards
1/4 cup cornbread mix
Cajun seasoning
Mix the the cornbread mix into 1 or 2 eggs in a bowl. Cover the gizzards with it.
Sprinkle some Cajun Spice over both sides to taste while frying them in a pan over light oil. Make sure you cook them almost to burning to get the best taste.

I simmered the gizzards first in some chicken broth until they were tender. Then I coated them with the cornbread mixture and fried them. I wanted them less chewy. I did add some salt and seasoning to the cornbread mixture itself but I think even a splash or two of hot sauce into it would have been good.

These were really tasty! Could have used a little more salt, but it might depend on the cornbread mix and/or Cajun spice we used.
