Pumpkins aren't just for pies or Halloween decorations. These large, orange gourds - while naturally sweet - also work well in savory dishes. They pair well with poultry and pork (and especially bacon) and their creamy-when-cooked texture blends easily into soups.

Brent loves sauerkraut and I was looking for an easy dinner recipe. This totally fit the bill. The sauerkraut mellows a bit with the long cooking time and the French dressing creates a nice sauce. I liked it. The flavor is strong, so if you don't *love* sauerkraut you might want to reduce the amount used but we thought it was good.
