Ah, the unassuming envelope of onion soup mix. It's more than just for onion soup (or dip). It adds tremendous flavor (and convenience) in all these recipes.




1 whole chicken, cut into serving pieces
1/4 cup flour
1 egg, lightly beaten
1/2 cup creamy peanut butter
1 teaspoon salt
1/8 teaspoon black pepper
1/3 cup milk
1/2 cup fine breadcrumbs
Preheat the oven to 375 degrees F. Grease a shallow baking dish.
Coat the chicken pieces with the flour, shaking off any excess.
In a shallow bowl, stir together the egg, peanut butter, salt, and pepper. Slowly stir in the milk until completely blended. Place the breadcrumbs in another shallow dish.
Dip the chicken pieces into the peanut butter mixture then roll in the breadcrumbs. Place the chicken in the baking dish.
Place the baking dish in the oven and bake at 375 degrees F for 1 hour or until the chicken is cooked through.
Serve hot.

came out burnt and no peanut butter taste...i think you should not use bread crumbs and use more peanut butter

Pretty good - though I overdid the breadcrumbs a bit. I should have just lightly rolled instead of entirely coated. I'll retry and also add some peanut bits to the breadcrumbs for fun.

A terrific recipe! The peanut butter and bread crumbs made a nice, crunchy crust on the chicken. Because of milk allergies in my family, I used an additional egg and 1/4 cup water in place of the milk called for in the recipe. Next time, I might experiment with more spices and some crushed peanuts in the bread crumb coating.

The peanut butter taste was not overpowering and it really held the breadcrumbs on the chicken nicely. We used boneless skinless chicken breast halves and reduced the cooking time a little.
