ingredients
1 medium head green cabbage, chopped
1 cup firmly packed spinach leaves, finely chopped
1 cup mayonnaise
1 tablespoon half and half
1 tablespoon granulated sugar
1 1/2 teaspoon white vinegar
1 dash black pepper
directions
In large bowl, combine cabbage and spinach. In small bowl, mix mayonnaise, half and half, sugar, vinegar, and pepper until well blended.
Pour over cabbage mixture and toss lightly to coat evenly. Cover and refrigerate at least 2 hours.

Love this recipe. I used to order this at Luby's in San Antonio. I did substitute carrots (about 3) for the spinach. If you love coleslaw, you won't be disappointed.
