This fat-free cole slaw is a delicious and healthy alternative to the mayo-laden versions. Makes a great side dish or salad.

Dressing
1/2 teaspoon salt, optional
1/4 teaspoon freshly ground black pepper
1/2 teaspoon dry mustard
2 tablespoons sugar
1/3 cup white vinegar
Salad
3 cups finely shredded green cabbage
1 carrot, peeled and grated
Combine the salt, pepper, mustard, sugar, and vinegar in a small bowl and whisk until smooth.
Place the cabbage and carrot in a large bowl. Drizzle the dressing over the cabbage mixture and toss to coat it well in the dressing. Cover the bowl and chill for 1-2 hours before serving.
Toss the cole slaw before serving and adjust the seasoning if needed.
