ingredients
4 ounces unsweetened baking chocolate
1 cup butter, softened
2 1/4 cups sugar
5 eggs, separated
2 3/4 cups cake flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
1 1/2 cup buttermilk or sour milk
1 teaspoon vanilla extract
Fluffy Vanilla Icing
1/2 pint light cream
1/2 cup all-purpose flour
1/2 cup butter, softened
1/2 cup shortening
2 cups powdered sugar
1 teaspoon vanilla extract
directions
Heat oven to 350 degrees F. Grease and flour three 9 inch round baking pans.
In top of double boiler over hot, not boiling water melt chocolate. Set aside to cool slightly.
In large mixer bowl, beat butter and sugar until light and fluffy. Add chocolate; beat until blended. Add egg yolks; beat well. Stir together flour, baking soda, baking powder and salt; add alternately with buttermilk and vanilla to butter mixture, beating until well blended. Beat egg whites until stiff, but not dry; fold into batter.
Pour batter into prepared pans. Bake 30 to 35 minutes or until wooden pick inserted in center comes out clean. Cool 10 minutes; remove from pans to wire racks. Cool completely. Frost with Fluffy Vanilla Icing.
For Fluffy Vanilla Icing: In medium saucepan, stir in light cream into flour. Cook over medium heat, stirring constantly, until smooth and very thick. Remove from heat. Place plastic wrap directly over surface; refrigerate until cold.
In large mixer bowl, beat butter and shortening until well blended. Gradually add powdered sugar and vanilla beating until blended. Add flour mixture; beat until light and fluffy.

I am a sucker for a good cake. I think it's because my granny would bake a cake every week and it was a personal highlight for me as a kid. I was intrigued with this one, because not only do I love cake but I love me some Gene Simmons (aka The Demon). Don't be scared off by the amount of ingredients or steps, it's really quite easy. This one has been printed and is now in my official "cake binder".
