ingredients

2 cups flour (plain)
2 cups sugar
1/4 cup margarine
3 tablespoons cocoa powder
1 cup cola
1/2 cup buttermilk
2 beaten eggs
1 teaspoon baking soda
1 teaspoon vanilla extract
1 1/2 cup miniature marshmallows

ICING:

1/2 cup margarine
3 tablespoons cocoa powder
6 tablespoons Coca-Cola
1 box powdered sugar
1 teaspoon vanilla extract

directions

Combine flour and sugar in bowl. Heat margarine, cocoa and cola to boiling in sauce pan. Pour over flour mixture and add remaining ingredients. Mix well.

Pour into greased and floured 9 x 13 pan and bake at 350 degrees F for approximately 40 minutes.

ICING: Bring margarine, cocoa and cola to boil; pour over sugar. Mix well; add vanilla. Pour over cake.

    I spent time with my precious Grandma and watched (helped) making this cake so many times. She NEVER made it in a 9 by 13. It was always what we now call a “jelly roll” pan; hers was like 13 by 17. I got to poke the holes and help spread the icing. It served so many more people. And the gal is right ... always better the 2nd or 3rd day...if it lasted that long. NOTE YOU WILL NEED TO REDUCE THE COOKING TIME ON THE CAKE.

    I've made this cake for 20 + years and it's sooo good. I always mix the marshmellows in the batter they float to the top. If you poke holes in the top w/ a toothpick the icing flows into the hot cake, YUM!

    The recipe said to mix 1st seven ingredients and then heat next four ingredients and gradually add to first mixture. I did not think that it would be ok to heat eggs so I heated the margerine, shortening, coke and marshmallows (the last four ingredients on the list). I then read that I was supposed to put the marshmallows in the cake pan under the batter. I am going to go forward to see what happens. Should I have heated the eggs with the margerine, shortening, coke and marshmallows?

    15 minutes needed to be added to the baking time. Eight people tested this cake. In a score of 1 to 5 three gave it a 9 the rest gave it a 3 1/2 to 4 1/2. The only complaint was "to sweet." This cake will travel very well and improves on day two and three. It couldn't be rated on subsequent days since it was gone. This is an excellent cake, heavy, moist, rich, for chocolate lovers. Frosting: substitute cola with water and use on other cakes. This is good too.
