Chocolate Oatmeal Cake With Coffee Frosting

ingredients
1 1/2 cup boiling water
1 cup quick-cooking oats
1 cup semisweet chocolate chips
1/2 cup margarine, softened
3/4 cup sugar
3/4 cup brown sugar
2 eggs
1 1/2 cup flour
1 teaspoon baking soda
1 teaspoon salt
FROSTING
2 tablespoons instant coffee granules
1/4 cup warm half and half
1/2 cup margarine, softened
1 teaspoon vanilla extract
1/8 teaspoon salt
4 cups powdered sugar
directions
In a bowl combine the water and oats. Sprinkle with chocolate chips (do not stir); let stand 20 minutes.
In a mixing bowl cream margarine and sugars. Add eggs, one at a time, beating well after each addition. Beat in oatmeal mixture. Combine flour, baking soda and salt. Add to creamed mixture and mix well.
Pour into a greased 9x13 pan. Bake at 350 degrees F for 40 minutes. Cool on wire rack.
For frosting, dissolve coffee granules in half-and-half; set aside.
In a small mixing bowl cream margarine, add vanilla and salt. Gradually beat in sugar. Beat in enough of coffee mixture to achieve spreading consistency. Frost the cake.
