ingredients
4 cups finely chopped green tomatoes
2 cups brown sugar, divided
2 tablespoons lemon juice, divided
1 teaspoon lemon extract
3/4 cup butter, softened
1 1/2 cup flour
1/2 teaspoon baking soda
1/2 teaspoon salt
2 cups oats
1/2 cup chopped nuts
directions
Chop tomatoes and drain for ten minutes.
In a sauce pan, combine tomatoes, half the brown sugar, and lemon juice. Simmer until thickened, about 20-25 minutes.
Remove from heat. Add lemon extract.
Mix remaining ingredients for crust and press 2 1/2 cups into a greased 9" x 13" pan. Spread tomato mixture over crust. Sprinkle reserved crumbs over tomato mixture.
Bake at 375 degrees F for 30-35 minutes.

We were looking for something to do with our end of the season green tomatoes, this is a very simple and tasty treat. my entire family loved them. we did not have lemon extract so we used vanilla extract instead. simply great. thanks for the ideas
