It may look like a sad little package shoved in the back of your freezer, but frozen spinach actually has a lot of culinary uses (and some may surprise you).
Easy Microwave Polenta

- #14835
under 30 minutes
ingredients
1 cup corn meal flour
3 1/2 cups liquid
directions
Use microwave oven with 700 watts power, or more.
Combine cornmeal and liquid (water, broth, milk, etc) in a microwave safe container. Microwave on full power for 24-28 minutes (depending on wattage and amount being cooked). Stop to stir every 5 to 6 minutes. Cook until desired consistency.
cook's notes
The ratio is 3 1/2 parts liquid to 1 cup corn meal. May have to adjust ratio depending on altitude and or type of flour. Be careful when using milk as the liquid as it tends to boil over more so use a larger container.

Not to be confused with evaporated milk, sweetened condensed milk is very sweet (and very sticky) and used primarily in desserts.
A can of cream of mushroom soup can be a real dinner saver. It works great in casseroles and can turn into a sauce or gravy in a pinch.

I'm going to give this a try. I see it is for 700 watt microwave for 24-28 minutes, so that's about 15 - 18 minutes at 1100 watts according to http://
