Perfect for those mornings when you don't have time to cook a big breakfast. Just a few minutes in the microwave is all you need. You can top the cornmeal with honey or syrup, or eat it plain.

1/2 cup cornmeal
2 cups water
salt, to taste
Stir together the cornmeal, water, and salt in a 2-quart microwave safe bowl. Cover the bowl with plastic wrap. Cook on high heat for 2 minutes. Stir well with a fork.
Cover the bowl again and cook for 2 more minutes on high. Stir again. Repeat and cook, covered, for 1 more minute on high.
Let stand for 1 minute before serving hot. It can also be chilled, sliced, and fried.

I love cornmeal mush. I don't use plastic ... I just heat on high for 2.5 minutes ... stir and do that again. I measure 1:4 and usually make a cup of cornmeal at a time. It is harder to get the lumps out but I don't mind them. Thanks for the recipe.
