Pizza night is always a favorite, especially when you have great tasting pizza from some of the most popular restaurants.

A delicious and lower fat alternative to French fries. Made with polenta, salt, and ketchup or marinara sauce for dipping.

olive oil spray
1 tube (18 ounce size) prepared polenta
sea salt, to taste
ketchup or low-fat marinara sauce for dipping
Preheat the oven to 450 degrees F. Place a large piece of parchment on a large baking sheet and lightly mist it with spray.
Cut the polenta in half crosswise, and then cut each half lengthwise into 1/2-inch-thick fries. Place the fries on the prepared baking sheet in a single layer so they do not touch. Mist the tops with spray, then lightly sprinkle them evenly with salt.
Bake them for 15 minutes. Carefully flip the fries, then mist the tops with spray and salt them. Continue baking an additional 15 to 20 minutes, or until the fries are lightly crisped and golden brown. Serve immediately with ketchup or marinara sauce, if desired.

Polenta is a healthy alternative to potatoes when it comes to fries. The texture is slightly chewier than regular fries but I have to say these are a fantastic alternative! Bake just as the recipe states and you'll be happy with the results. We bought polenta in a "block" instead of the roll which made cutting it into fries even easier. Use a textured-blade knife to get krinkle-cut fries.
