ingredients
2 tablespoons olive oil
2 cups finely chopped onion
1/4 teaspoon crushed red pepper flakes
8 cloves garlic, minced
2 bay leaves
2 tablespoons water
4 cups canned cannelini beans, rinsed and drained
4 teaspoons white wine vinegar
1/2 teaspoon salt
1/4 teaspoon black pepper
directions
In a skillet, heat oil on medium-high. Add onion; cook 6 minutes. Add pepper flakes, garlic and bay leaves; cook 4 minutes.
Stir in water and beans. Cook 3 minutes, or until heated. Stir in vinegar, salt and pepper. Discard bay leaves and serve.
If beans become too dry, thin with broth or water.
