Savor every bite of this flavorful ham and potato frittata, where tender ham, cooked potatoes, and a blend of eggs, garlic, and onions come together under a melted Cheddar cheese topping.

ingredients
1 tablespoon oil
1/3 cup chopped onion
1 clove garlic, minced
1 1/2 cup chopped ham
1 1/2 cup chopped, cooked potatoes
1/4 teaspoon black pepper
6 large eggs
3/4 cup shredded cheddar cheese
2 teaspoons finely chopped chives (or more to taste)
directions
Preheat the oven to 375 degrees F.
Heat an oven-proof, 10-inch skillet over medium-high heat. Add the oil, onion, and garlic and cook for 2 minutes, stirring frequently. Add the ham, potatoes, and black pepper and cook for 2-3 more minutes, stirring occasionally, or until everything is heated through.
Beat the eggs in a bowl until uniform in color, then pour into the skillet. Stir gently to coat the other ingredients in the egg then let the eggs cook for 5-6 minutes without stirring, or until the eggs are mostly set, but still moist on top. Sprinkle the top of the eggs evenly with the cheese and chives.
Place the skillet in the oven and bake at 375 degrees F for 10 minutes or until the eggs are fully set.
Remove the skillet from the oven and cut the frittata into wedges to serve.

I used the suggestion of frozen hashbrowns instead of the regular potatoes and it turned out great!

Excellent. I was a bit too heavy on the ham and potatoes, so it took longer for the eggs to cook on the top. Consequently the bottom was slightly dark. Still tasted great though!

This was very easy to do, I used frozen hash browns, and didn't measure and I could have used a bit more eggs, however, it was yummy!
