Bobotie Frittata

ingredients

2 cups cubed white bread, crusts removed
1 cup milk
3 tablespoons vegetable oil
1 medium onion
2 cloves garlic
1/2 pound ground beef
1/2 pound ground lamb, bison, or other game
3 tablespoons mild curry powder such as Madras
2 bay leaves
salt and pepper
2 eggs

directions

Preheat oven to 350 degrees F.

Place cubed bread in a bowl and cover with milk. Let soak 5 minutes. After 5 minutes remove the bread and squeeze to remove excess milk. Reserve milk and set bread aside separately.

Meanwhile heat oil in a large saute pan over medium heat. Chop onion and mince garlic. Add onion to the saute pan and cook for 3 minutes until they begin to soften. Add garlic and cook for another two minutes until softened. Add ground meats, curry powder, bay leaves, salt and pepper to the saute pan. Increase heat to medium high and brown for about 5-7 minutes breaking up meat as you go until the meat is cooked through. While meat is cooking whisk eggs in a bowl to scramble. Add reserved milk plus a little salt and pepper and whisk until evenly incorporated. Once meat is fully cooked, stir in cubed bread then pat mixture down to even out. Turn off heat and pour egg mixture over the meat.

Place saute pan in the preheated oven for about 10 minutes until eggs are set. Serve immediately.
