Turkey Tenderloin

ingredients
1 1/2 pound turkey tenderloin
2 tablespoons fresh cilantro, chopped
3/4 teaspoon grated orange peel
1 teaspoon salt
1 teaspoon sugar
directions
Combine cilantro, orange peel, salt and sugar in small bowl. Pat evenly on to turkey. Cover, refrigerate 3-4 hours.
Place turkey on broiler pan. Broil, 4-5 inches from heat, until a meat thermometer registers 180 degrees F.

This recipe really needed help to keep tenderloin from drying out. I suspected as much but tried it anyway. I think some olive oil underneath and on top of the meat might help it hold the moisture. it only needs about 45 minutes too, by the way, I saw another recipe where you put the tenderloins in a pan on some olive oil, and add a mix of white wine and an chicken broth mixed iwht herbs, and cook it covered in foil. I think that will work better and intend to try it. This made for some nice flavors and I will probably try it again with some olive oil on top and underneath. I'm going to try o make some gravy to go with it.

This was so easy and the orange peel rub added a lot of flavor! A VERY easy way to dress up a plain turkey tenderloin.
