Sweet And Spicy Turkey Skillet

ingredients

1/2 cup apple juice
1/4 cup bottled hoisin sauce
1 teaspoon grated fresh ginger
1/4 teaspoon salt
1/8 teaspoon cayenne pepper
2 small red, green, and/or yellow bell peppers, cut into bite-size strips
1 medium onion, cut into thin wedges
2 tablespoons cooking oil
4 turkey breast tenderloin steaks, cut 1/2 inch thick
1 tablespoon cold water
2 teaspoons cornstarch
1 small apple or pear, cored and cut into wedges

directions

In a small bowl combine apple juice, hoisin sauce, ginger, salt, and cayenne pepper. Set aside.

In a large skillet, cook sweet peppers and onion in hot oil over medium-high heat for 4 to 5 minutes or until nearly tender. Remove vegetables, reserving oil in skillet.

Add turkey to skillet and cook about 4 minutes or until light brown, turning once.

Return vegetables to skillet and add apple juice mixture. Bring to boiling, then reduce heat. Cover and simmer for 8 to 10 minutes or until turkey is no longer pink (170 degrees F).

Using a slotted spoon, transfer turkey and vegetables to a serving platter. Cover and keep warm.

In a small bowl, combine water and cornstarch, then stir into liquid in skillet. Cook and stir over medium heat until thickened and bubbly. Stir in apple.

Cover and cook about 3 minutes more or just until apple is slightly softened. Serve over turkey and vegetables.
