Ah, the unassuming envelope of onion soup mix. It's more than just for onion soup (or dip). It adds tremendous flavor (and convenience) in all these recipes.

ingredients
1/2 cup boiling water
1/3 cup couscous
1/2 cup red bell pepper, diced
1 teaspoon dried thyme
1 teaspoon curry powder
1/2 teaspoon cumin
1/2 teaspoon allspice
1/2 teaspoon ground ginger
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon paprika
1/4 teaspoon cayenne pepper
1 tablespoon canola oil
1 pound ground turkey breast
1 egg white
directions
In a small bowl, combine the water and couscous. Cover the bowl and allow the mixture to stand 15 to 20 minutes or until couscous has absorbed all of the water.
In a small non-stick skillet over medium-high heat, saute red bell pepper, thyme, curry powder, cumin, allspice, ginger, salt, black pepper, paprika and cayenne pepper in oil for 1 to 2 minutes. Let cool.
Spray a 9-inch pie plate or a 8- x 4- x 2-inch loaf pan with vegetable cooking spray.
In a medium bowl, combine turkey, egg white, bell pepper mixture and couscous. Shape the mixture into a round or rectangular loaf and place it in the plate or pan.
Bake at 350 degrees F for 35 to 45 minutes, or until the meat thermometer reads between 160 and 165 degrees F when inserted into the center of the meat and the juices run clear.

Pumpkins aren't just for pies or Halloween decorations. These large, orange gourds - while naturally sweet - also work well in savory dishes. They pair well with poultry and pork (and especially bacon) and their creamy-when-cooked texture blends easily into soups.

I have made this recipe more than a dozen times and the family always enjoys it very much. We modify the spices a bit, doubling the curry powder and increasing the others by about half -didn't seem to have quite enough flavor as it is written. I use a whole egg. It's a great beginner's recipe
