This iconic whiskey is a "Jack of all trades" when it comes to cooking. Toss it in some pasta, as a savory dipping sauce, and even bake it into something sweet.


Healthy couscous grains along with fire-roasted tomatoes turn ground turkey into a tremendously moist and flavorful loaf.


1 1/2 pound ground turkey
1 package (10 ounce size) frozen chopped spinach
1 can (15 ounce size) fire roasted diced tomatoes, drained
1 package (6 ounce size) couscous with seasoning packet (any flavor)
1 1/4 cup boiling hot water
1 egg
seasoned pepper and salt, to taste
Heat oven to 375 degrees F.
Combine couscous and water and set aside. When all water is absorbed, lightly fluff with a fork.
Cook the spinach as directed on package. Drain very well, pressing out as much of the water as possible.
Combine the turkey, egg, seasoning packet from couscous, seasoned pepper and salt, drained spinach and half the tomatoes. Stir in the couscous.
Place mixture in a loaf pan and top with remaining tomatoes. Bake for 1 hour or until meatloaf registers 160F on a meat thermometer.
This is a lovely, light meatloaf with lots of flavor. Try different flavored couscous (we used roasted garlic). The couscous is a nice change from the oatmeal or breadcrumb based meatloaf recipes.

My family has used this recipe several times before reviewing, although we loved it at first bite. I'm a man and lazy on top of that. This recipe is SUPER EASY. We even love the leftovers they are just as delicious as the same day and my wife is not a fan of leftovers. Thought I lost this page, I took some time finding it again. I will continue to use this recipe well into the future.

A CDKitchen original! This meatloaf is tasty and light. The couscous flavor can be varied to suit your tastes. Or, use plain couscous and dress it up with your own seasoning blends. The couscous keeps the texture from being too dense but at the same time it is a sliceable meatloaf.
