Slow Cooker Ground Beef Rice and Cabbage Hot Pot

ingredients
1 pound ground beef
1 cup finely chopped onion
2 cloves garlic, minced
6 cups chicken broth
1/2 cup ketchup
3 cups finely chopped or shredded cabbage
1 cup long-grain white rice
1 1/2 cup frozen corn kernels
2 carrots, peeled and sliced
2 teaspoons dried thyme
1 bay leaf
1/4 teaspoon black pepper
salt, to taste
directions
In large skillet, brown ground beef and onion, till meat is brown and onion is tender, stirring frequently. Drain.
Transfer meat mixture to crock pot. Add all remaining ingredients. Stir to mix well. Cover and cook on LOW setting 5 1/2 to 6 hours. Remove bay leaf.

This came out tasting real good for me....I think it's a pretty good inexpensive meal, and easy to make, too. I used canned corn instead of frozen, and Italian seasoning instead of thyme and bay. Also I just used 2 cans of chicken broth instead of 6 cups....that way it wasn't too soupy, and I could eat it on a plate instead of in a bowl....It would go great with some cornbread...
