Slow Cooker Unstuffed Cabbage Casserole

Love cabbage rolls? Try this unstuffed version made by combining the ingredients in the crock pot. Same flavors, less work!

ingredients

1 pound ground beef
1 small onion, chopped
4 cups chopped cabbage
1 green bell pepper, chopped
1 can (15 ounce size) diced tomatoes, undrained
1 cup uncooked instant rice
1 cup water
1 can (6 ounce size) tomato paste
1/2 cup ketchup
2 tablespoons vinegar
1 tablespoon sugar
1 tablespoon Worcestershire sauce
1 1/2 teaspoon salt
1/2 teaspoon black pepper
1/4 teaspoon garlic powder

directions

In a large skillet over medium heat, brown the beef and onion, stirring frequently to break up the beef. Cook until the beef is no longer pink and the onion is soft. Drain off any excess grease.

Add the browned beef and onion to the crock pot. Add the cabbage, bell pepper, tomatoes, and rice.

In a bowl, combine the water, tomato paste, ketchup, vinegar, sugar, Worcestershire sauce, salt, pepper, and garlic powder. Mix until smooth. Pour the mixture into the crockpot. Stir well to combine.

Cover the crock pot and cook on low heat for 4-5 hours or until the rice and cabbage are tender.

    It worked with the regular rice. At first I thought it wasn't going to but after 5 or 6 hours it was soft. I think that makes way more than six servings.

    I have made this twice - love it. Was also wondering about using regular rice. Since the cook time is so long don't you think it would work just fine? I add a tiny can of v-8 juice to mine so that would probably make up for the extra liquid you would need. I think that the regular rice might actually not be as mushy... I will try it and let you know

    • This recipe was developed using instant rice. Using regular rice would require adjusting both the cooking time and liquid ingredients in the recipe.

    I love cabbage rolls but honestly hate the whole rolling process. This is a good substitute as it has all the same ingredients, just with less work. I do cook it longer than 4-5 hours though because I like the cabbage to be more tender.
