3 cups all-purpose flour
2 tablespoons baking powder
1 pinch salt
2 eggs
1/8 cup oil
1 cup buttermilk
1 teaspoon vanilla extract
Preheat a greased griddle over medium heat.
Sift together the flour, baking powder, and salt. Whisk together the eggs, oil, buttermilk, and vanilla in a large bowl. Stir in the flour mixture and mix until smooth.
Pour the batter by 1/4 cupfuls onto the prepared griddle. Cook until bubbles form, the tops of the pancakes are dry, and the bottom is browned. Flip over and cook until done. Repeat with remaining batter.
Serve the flapjacks hot with butter, maple or fruit syrup, or any other desired toppings.
