ingredients
1/2 cup flour
1 egg white
2/3 cup milk
powdered sugar
Apple Topping
1 sweet cooking apple
1/2 cup apple juice
sifted powdered sugar
directions
Blend the flour, milk and egg white in a blender until smooth.
Heat a 10-inch frying pan over high heat. Spray with cooking spray.
Pour half the batter into the pan, swirling to make a thin layer that covers the bottom of the pan. Cook until the top appears dry, then slide onto a plate. Turn over and slide back into the pan and cook for about a minute or until browned on the bottom.
Slide onto a large plate, sift powdered sugar over the top and serve immediately. Repeat with the remaining batter.
For Apple Topping: Before starting the pancakes, peel and thinly slice a sweet cooking apple. Poach in apple juice, just until softened.
After turning the pancake over, arrange apple slices on top. Slide finished pancake onto a large plate and sift powdered sugar over the top.
