2 cups flour
1 teaspoon salt
1 teaspoon baking soda
1 cup sour cream
1 cup milk
OR
1 cup buttermilk
1 teaspoon vanilla extract
3 eggs, separated
powdered sugar

NOTE: You should use the 7 hole Danish Aebelskiver pan for this recipe. Pans come cast iron, nonstick, electric and so on, and can be purchased at specialized kitchen stores or online catalogs.

The aebelskiver are a nice change from regular pancakes. Often pieces of apple or bits other fruit are cooked into the aebelskiver for variation.

Combine the dry ingredients in a bowl. Make a well in center and add the yolks and sour cream and milk or buttermilk and mix and blend well. Beat whites until soft peaks form and stir into the batter.

Heat the pan over medium heat and add a bit of oil or butter to each hole (or spray with cooking oil) each time pan is filled. Fill holes 2/3 to 3/4 full. Cook a few minutes and carefully turn to cook other side.

This can be a bit tricky until one gets used to doing this. Sometimes a knitting needle is used to lift and turn but you can use the rim of a spoon to do this. If they come apart, they still will cook up nicely. Cook golden brown.

Remove from pan and dust with powdered sugar if desired. Serve with any other syrup or condiment one serves with pancakes. About 7 balls per serving.

    I give it a 5. With word of caution. Don't forget to add the vanilla. While reading the written instructions, I noticed that vanilla is not included with the other moist ingredients. Otherwise enjoy.

    I have visited Denmark and have made Aebelskiver there. This recipe is great. The whipped egg whites give them a light and airy quality. Very enjoyable. I have shared it with others, and they can't get enough of them. We enjoy them on weekends.
