ingredients

2 cans creamed corn
6 eggs
1 cup flour
1 1/2 teaspoon baking powder
1/2 teaspoon salt
1/4 teaspoon nutmeg

directions

Beat eggs until light. Add corn and mix. Add rest of ingredients and blend.

Brush griddle with melted butter and use 1/4 cup batter per cake. Brown lightly and sprinkle with confectioners' sugar. Serve with maple syrup.
