ingredients
1 pound ground beef
1/2 cup chopped onion
2 cloves minced garlic
1 tablespoon cumin
1 teaspoon chili powder
8 ounces softened cream cheese
2 cans (10 ounce size) Ro-tel tomatoes - undrained
2 cans beef broth
1/2 cup heavy cream
2 teaspoons salt, or to taste
directions
In a large soup pot, brown the ground beef with the onion and garlic; drain. Add the spices and cook 2-3 minutes.
Drop the cream cheese in bits into the meat and stir it into the meat until no bits of white remain.
Stir in remaining ingredients and heat through.

I wanted some comfort-type food and this fit the bill. It was very hearty and flavorful. I liked that it didn't use taco seasoning mix like a lot of the taco soups do. I also tried it with low fat cream cheese and fat-free half in half in place of the heavy cream. If you keep the heat low you can use the reduced fat products with success.
