ingredients
3 medium tomatoes, peeled, seeded, and diced
3 cups no-salt-added tomato juice
1/4 cup diced onion
1/4 cup diced celery
1 medium green bell pepper, seeded and diced
1/4 cup sliced green onions
1 medium cucumber, chopped
3 cloves garlic, minced
2 tablespoons chopped fresh parsley
1 teaspoon chopped fresh cilantro
3 tablespoons red wine vinegar
1 dash hot sauce
1/2 teaspoon salt
1/8 teaspoon freshly ground black pepper
directions
Combine all ingredients in a large bowl, stirring well. Cover and chill 8 hours or overnight. Ladle into soup bowls.
