Caribbean Turkey Soup

ingredients
4 cups turkey or chicken stock
2 cups chopped cooked turkey
1 cup orange juice
1 large sweet potato, peeled and diced
1 medium onion, chopped
1 green bell pepper, cored, seeded, and diced
1 teaspoon cider vinegar
1/2 teaspoon dried thyme
1/4 teaspoon ground ginger
1/4 teaspoon ground allspice
1/4 teaspoon freshly grated nutmeg
salt and freshly ground black pepper, to taste
Chopped cilantro (coriander leaves) for garnish
lime wedges for garnish
directions
Combine all ingredients in a large pot and bring to a boil over high heat. Reduce the heat to low and simmer covered until the vegetables are tender,about 20 minutes. Garnish with chopped cilantro and serve with lime wedges.

I have been making this recipe for a few years now, and it's still so good I had to comment. I add lots of Mrs. Dash Fiesta Lime seasoning to both the broth while cooking and the fresh turkey I use (since I normally don't have leftover anything in my house, lol). I also usse the Mrs. Dash Fiesta Lime in the actual broth, and will add in just a touch of some cilantro and lime juice while it's cooking. This dish ALWAYS goes over well. It's great for potlucks and dinners at home and it's so simple and easy. Oh--and I serve mine over steamed, white rice. Yummy :).

Cooked a turkey breast but we had lots leftover. I didn't want to do the usual turkey casserole so tried this recipe. Very good. Although my store didn't have any sweet potatoes so I used white.

Made this recipe tonight and it was fabulous. We didn't have any leftover turkey, lol, but I bought turkey tenderloins, chopped them up, sauteed them in a pan with some seasoning and used that instead. I also added about 6 stalks of chopped celery, lessened the amount of sweet potato just a bit, and added a lot more seasoning (which is something I do with all my recipes, lol). Overall, as I said, just fabulous.

Y-U-M!!! This was such a change from the usual "leftover turkey soup" recipe. I didn't have any thyme or all spice so I added paprika and garlic salt and also extra ginger. It was fantastic. We are so eager to have it again for lunch tomorrow!

I entered this soup into a church soup cook-off competition today (1/25/09) and it won first prize! Thank you. I did follow the recommendation of reducing the allspice by one-half and add tabasco sauce. Superb recipe!

Hello Caribbean and goodbye traditional style vegetable-noodle recipes for leftover turkey! This is one of those recipes that the flavor is so vibrant, so different and so good that if you'd tasted it at a restaurant you'd still be craving it the next day and become obsessed with finding a copycat recipe! It's also beautiful in color, so make sure you serve it in a white or clear bowl if possible. The recipe needs a splash of tabasco to perfect the sweet-spicy combination it aims for. I made the following modifications -- a half stalk of celery,finely chopped, added with the onion and sweet potatio; reduced by half the amount of allspice; put some chopped cilantro in the soup (last five minutes of cooking) as well as on top; tabasco to taste in indiviidual bowls. I will definitely make it again.
