Mexican Lasagna

ingredients
1 pound ground beef
1 can refried beans
1 package taco seasoning mix
12 uncooked lasagna noodles
2 1/2 cups salsa
2 1/2 cups water
2 cups sour cream
sliced green onions
1 cup Monterey jack cheese shredded
1 small can drained chopped black olives (optional)
directions
Cook hamburger with some onions if desired. Drain. Mix hamburger with refried beans and taco seasoning.
Layer 4 uncooked noodles in a 9 x 13 pan. Spread 1/2 meat mixture on top of noodles. Repeat layer and top with the 4 remaining noodles. Mix salsa and water together and pour over the top of the casserole.
Cover with foil and bake for 1 1/2 hours at 350 degrees F.
Mix sour cream, onions and black olives together. Spread on cooked lasagna and top with cheese. Bake uncovered till cheese melts.

I made a vegetarian version of this. So added two kinds of beans and didn't cook it with the sour cream but added it after on top as a topping. It was great! I wished I had used corn tortillas or regular lasagna. The only one I could find was flat no boil lasagna and it tasted like won ton wrappers.. :( I'll defiantly try it again!

WOW!! I had a weekend of Mexican food for my Mexican fiance meeting my Irish family. I made all traditional Mexican food 3 meals a day. This was the final dinner on the final day together and was the simplest to make (after laboring over the stove with unfamiliar recipes all weekend) and it went over SOOO WELL!!! There were left overs from every meal EXCEPT THIS ONE! People were having 2nd and 3rd helpings! I HIGHLY RECOMMEND THIS RECIPE!!

This recipe is awesome! Except i don't use taco seasoning. I make it for guest and they love it. My husband never even had it until i made it for him and now its his fav dish!
