Pumpkins aren't just for pies or Halloween decorations. These large, orange gourds - while naturally sweet - also work well in savory dishes. They pair well with poultry and pork (and especially bacon) and their creamy-when-cooked texture blends easily into soups.

A couple of notes. Either use lean ground beef or ground sirloin. Brown it it first and then or drain it really well before adding the water and taco seasoning mix. Second, cool the mixture before layering the ingredients. I added more avocado and used regular onion instead of green onions.
