1 teaspoon olive oil
1/2 cup chopped onion
1 cup shredded cooked turkey
fresh ground black pepper
3/4 cup shredded Swiss cheese, divided
2 large eggs, PLUS"PLUS" means this ingredient in addition to the one on the next line, often with divided uses
2 large egg whites
1 cup cottage cheese
1/2 cup evaporated milk
1 cup fresh baby spinach leaves
1/4 cup shredded sharp white Cheddar cheese
1/2 cup all-purpose flour
1 teaspoon baking powder
1/8 teaspoon salt
directions
Preheat oven to 350 degrees F.
In a large skillet, heat oil over medium-high. Stir in onion and cook until onion just begins to soften, about 2 to 3 minutes.
Stir in turkey and season with fresh ground black pepper. Continue to cook until the turkey is thoroughly heated through and lightly browned, about 3 to 4 minutes. Remove from the heat and set aside.
Scatter about 1/4 cup of the Swiss cheese into the bottom of a 9-inch pie plate coated with cooking spray. Arrange shredded turkey mixture on top.
In a large bowl, whisk together eggs, egg whites, cottage cheese and milk until combined. Stir in spinach and remaining Swiss cheese and white Cheddar cheese.
In a small bowl, whisk together flour, baking powder and salt. Add to egg mixture and stir until combined. Pour mixture into pie plate over the turkey mixture.
Place in the oven and bake until a knife placed into the center comes out clean, about 40 to 50 minutes. Remove and let cool slightly before serving.
