The tasty flavors of jalapeno poppers turned into a dip. Cream cheese is mixed with mayo, green chiles, jalapenos, and a combination of Mexican and mozzarella cheeses. It's topped with a crunchy panko breadcrumb topping and baked until bubbly.
2 packages (8 ounce size) cream cheese, softened
1 cup mayonnaise
1 can (4 ounce size) chopped green chiles, drained
1 can (4 ounce size) diced jalapeno peppers, drained
2 1/2 cups shredded Mexican style cheese
2 1/2 cups shredded mozzarella cheese
1 cup panko breadcrumbs
2 1/2 cups grated Parmesan cheese
4 tablespoons melted butter, more if needed
Preheat the oven to 375 degrees F.
In a medium bowl, combine the cream cheese, mayonnaise, green chiles, jalapenos, and shredded cheeses. Mix thoroughly with a spoon or spatula until smooth and evenly combined. Spread the mixture into a baking dish (approximately 9 x 9-inches).
In a second bowl, combine the Panko and Parmesan and stir with a fork until combined. Stir in the melted butter to thoroughly coat the bread crumbs. Sprinkle the mixture over the cream cheese mixture in the baking dish.
Bake for 25-30 minutes or until the mixture is hot and the topping is golden.
Serve the jalapeno popper dip warm with baguette slices, vegetables, etc. as desired.

Excellent dip with a surprisingly subtle flavor. I wondered if the butter and cheeses would make it a little too salty. But not at all. I highly recommend this recipe!

This is a delicious dip! It's not overly hot and spicy as the cream cheese and mayo sort of subdue any heat from the jalapenos and green chiles (I used "hot" green chiles too). The crunchy topping on top is wonderful.
